Rabri Seviyan Katori





Ingredients:

  • Vermicelli (300 gm)
  • Butter (4-5 tsp)
  • Condensed milk (375 gm)
  • Milk (2 litres)
  • Sugar to taste 
  • Almonds (10 gm)
  • Pistachios (10 gm)
  • Cardamom powder (1/4 tsp)




How To make The Recipe


Make a Katori:
  1. Take the vermicelli in a pan and dry roast it for 5-7 minutes on medium low flame until it becomes golden brown
  2. Add butter and mix it with vermicelli and then add condensed milk (200 gm)
  3. Cook it for 5-7 minutes with continuously stirring so that they mixed very well (become thick) 
  4. Take small part of the prepared vermicelli in a small bowl
  5. Spread the vermicelli on the side of this bowl like a nest (see the picture)
  6. Keep those katori in a refrigerator for 30 minutes
Make a Rabri:
  1. Take the milk (2 ltrs) in a large pan and boil it for 30 minutes
  2. Add condensed milk (150 gm) and sugar and mix them well
  3. Continue boil the milk. A stage will reach when the reduced milk will resemble like a viscus liquid. From this time, stir continuously, otherwise it will burn
  4. Add almonds, pistachios, and cardamon (1/4 tsp) powder and mix them well
  5. Whole process  will take  ~2 hrs
  6. Take out the rabri from oven and allow to cool it at room temperature
  7. Rabri is ready for next step 
  8. Fill the Katori with rabri
  9. Garnish with pistachios and serve it
