Egg devil


Ingredients:
  • Hard boiled eggs (6 pieces)
  • Boiled potato (6 pieces)
  • Cumin seed (1/2 tsp)
  • Dry chili (3 pieces) 
  • Chopped onion (1 piece)
  • Chopped garlic (1 tsp)
  • Chopped ginger (1 tsp)
  • Bhaja moshla (1 tsp)
  • Egg (1 piece)
  • Black pepper powder (1/3 tsp)
  • Bread crumbs (1 cup)
  • Salt  to taste 
  • Oil to fry

Bhaja moshla :
  • Coriander seeds (1 tsp)
  • Fennel seeds (1 tsp)
  • Cardamom (2 pieces)
  • Cumin seeds (2 tsp)
  • Clove (2 pieces)
  • javitri (1 pieces)
  • fenugreek leaves (1 tsp)

Preparation:

Bhaja moshla:
  1. Take cumin seeds in a dry hot pan and saute it for 30 sec. Add coriander seeds and continuously stir it for 30 sec. Then add fennel seeds, cardamon, clove, javitri and stir it continuously
  2. Add fenugreek leaves and fry for 20 sec
  3. Cool the mixture and take it in mixture grinder and grind it to smooth dust
Potato stuffing:
  1. Fry dry chili on a dry pan for a minute and then add salt and saute it for a minute. Cool and grind it and keep aside red chili dust 
  2. Boiled potatoes and drain out water. Cool and mash it (make sure there is no lumps in the mashed potato) and keep it aside
  3. Heat oil in pan and then add cumin seeds, dry chili and saute them for a minute and then take out the dry chili and little oil. Grind the chili and oil and keep chili oil aside
  4. Then add garlic and cook for 30 sec and then add onion and saute until it turns into golden brown then add ginger and saute it for a minute
  5. Then add bhaja moshla (1 tsp), red chili dust ( 1/3 tsp), salt, chili oil and mix them
  6. Then add mashed potato and mix the moshala very well with mashed potato and keep it aside
Prepare the eggs:
  1. Boil those eggs and cool them and keep them aside
Make the devils:
  1. Beat a egg in a bowl and add salt, black pepper and whisk it and keep egg batter aside
  2. Take bread crumbs in another plate and then add salt and black pepper and mix well and keep it aside
  3. Keep side by side boil egg, mashed potato, egg batter, bread crumbs
  4. Take one boiled egg and cover the egg with mashed potato. Do the same for other eggs
  5. Dip the devil in egg batter and then roll it with bread crumbs so that it is coated by bread crumbs.  Do this process two times. Prepare rest of the devils in the same way and keep these devils aside for 30 minutes
  6. Heat enough oil in a deep pan. The oil should be smoking hot. Slide these devils in the oil very carefully and fry till golden brown
  7. Take them out from the oil and keep these devils on a pepper towel. Sever this with sprinkling some black salt on the top of the devils, tomato ketchup, chopped cucumber and onion
