Coconut Chicken 


Ingredients:
  • Boneless chicken (500 grams)
  • Coconut milk ( 200 ml)
  • Oil (3 tsp)
  • Dried red chili (2 pieces)
  • Chopped onion (2 pieces)
  • Ginger & garlic paste (2 tsp)
  • Green chili (2 pieces)
  • Salt to taste 
  • Black pepper (1/2 tsp)
  • Red chili powder (1 tsp)
  • Cumin powder (1 tsp)
  • Coriander powder (1 tsp)
  • Turmeric powder (1/2 tsp)
  • Dry coconut (2 tsp)
  • Chopped tomato (2 small pieces )
  • Chopped coriander (1 tsp)
Instructions:
  1. Heat the oil in a non stick pan and then add red chili, garlic and saute it for a minute
  2. Then Add chopped onion and cook until it turns light brown color 
  3. Add ginger and saute it for a minute. Add green chili, salt, black pepper, red chili powder, turmeric powder, cumin powder, coriander powder and stir it for a minute
  4. Add 1/4 cup water and cook it for 2-3 minutes until oil is separated
  5. Then add chicken and mix with masala. Cook it for 5 minutes in medium flame
  6. Add chopped tomato and cover the lid and cook it in medium flame for 10 minutes
  7. When the water will dry out , then add coconuts milk and cook for 10 minutes
  8. Add dry coconuts and mix it well and cook it for a minutes
  9. Spread the coriander leaves and switch off the flame 
Notes:
You can eat this delicious chicken with rice, chapati or nan whatever you prefer. It goes perfect with all type of menu
